We don't eat it and it takes too much work to remove it before cooking and it's not necessarily cheaper. So does it do something for flavor?
Absolutely! Skin has wonderful flavor and when it is fried it adds that crunchy goodness that KFC is famous for. It also serves at a protective layer for the flesh and naturally moistens the meat as it is roasting (kind of like a natural basting method).
