Coconut French toast that will take you to paradise
If you like coconut this is something you need to try. Believe me it is wonderful and it has the added benefit of being easy to make. Here’s the procedure.
You begin the same way you would for regular French toast; take bread slices and dip them in the usual egg and milk soaking custard. I will usually add some sugar and cinnamon added to the mixture as well. After your bread slices are dipped adequately lay them on a preheated griddle and then grab your bag of shredded coconut. Take a handful of coconut and sprinkle the top of each slice. Be as generous as you like. Then take your spatula and gently press the coconut into the bread (or use your fingers). Let the first side cook and then flip it over and cook the side that has all the coconut pressed into it. Let it get nice and browned.
When we were in Hawaii we found this amazing little restaurant that served an all night breakfast on the island of Oahu. They offered a French toast like this and then topped it with chunks of fresh mango and pineapple. Of course, they had some exotic syrups that you could choose from as well but with something like this you hardly need the addition of syrup. They also pressed crushed macadamia nuts into the bread along with the coconut so it was doubly decadent.
Honestly, when you’re in paradise (and I do put Hawaii in the category) that is the perfect way to start the day. When you’re back home and sucked into the routine of every day life and you need something to lift your spirits – take yourself back to paradise by making this French toast and it will change your day.
